“Olio nuovo” is Italian for new oil. It is the extra virgin olive oil in its first two months of existence that comes straight from the milling process right after harvest. The first thing you’ll notice is the surprisingly bright green color. The second is the intensity and freshness of the flavor. 

For generations, old farmers would set aside the new olive oil to rest for at least a couple of months. They’d say, “It’s not ready yet!” And in some ways, they were right. In this resting period, the natural suspensions present in the fresh olive oil would deposit at the bottom of the orcio (the old terracotta container used to store extra virgin olive oil). Gravity did the filtration work and the oil would acquire its natural color and refined, mature flavor.

Nowadays, we don’t wait. There is an increasingly growing interest in olio nuovo for its health benefits, as this is when its polyphenolic content is at its highest. In addition, our modern palates crave the punchy, spicy flavor experience of hyper-fresh extra virgin olive oil. Fortunately for you, we work with a cutting-edge and modern mill that uses ultrasonic technology to extract 25% more polyphenols. They apply a light filtration that extends the life of the oil while preserving the intensity of olio nuovo. The polyphenol level of our Originale is ~650 mg/kg.

While we cannot transport you to the actual frantoio here in Umbria, we can ship you Olivando fresh from the mill, within weeks of harvest and pressing.
