The Monocultivar pairs perfectly with bruschetta, earthy legume soups, stewed or roasted game, and blue fish. Try it on your T-bone, with rosemary and fresh ground pepper.

2022 was a fantastic year for olives. It was our most abundant harvest to date and the quality of this year’s crop is stellar, with a very high polyphenol content. We are really proud of what we have created and cannot wait for you to enjoy it.

About the Monocultivar

Monocultivar or monovarietal means that only one single olive variety was used in making the extra virgin olive oil. Our Monocultivar is made from 100% Moraiolo olives, considered among the most renowned varieties produced in Italy. The Moraiolo olive tree is indigenous to central Italy, requires hilly terrain, and is best suited for mountain climates. We harvest early when the olives contain the highest level of polyphenols, which contributes to its spicy bitterness.

Tasting Notes

Palate: complex and intriguing, intense green fruity flavor with a fresh taste of grass, artichoke, and chicory.
Finish: gently spicy and peppery, with a clean bitterness.
Pairings: perfect for bruschetta, earthy legume soups, stewed or roasted game, blue fish. Try it on your T-bone, with rosemary and fresh ground pepper.

Always harvested early, always harvested by hand. We begin early in the season, when the olives contain the highest level of polyphenols and antioxidants, and we put the harvest date right on the bottle.
