The Originale is cold-pressed, extra virgin olive oil made from a blend of 3 different olives; Moraiolo, Frantoio, and Leccino. It’s intensely herbaceous, bright, and alive with a harmony of tomato, apple, and fresh cut grass. For us, this is the EVOO that started it all. In the mountains where we live here in Umbria, this blend has been made by farmers for centuries. It is the quintessential Umbrian olive oil.
Monocultivar or monovarietal means that only one single olive variety was used in making the extra virgin olive oil. Our Monocultivar is made from 100% Moraiolo olives, considered among the most renowned varieties produced in Italy. The Moraiolo olive tree is indigenous to central Italy, requires hilly terrain, and is best suited for mountain climates. We harvest early when the olives contain the highest level of polyphenols, which contributes to its spicy bitterness.
