Olivando works with a cutting-edge and modern mill that uses ultrasonic technology to extract 25% more polyphenols. It’s the only one of its kind in Italy, based right here in Umbria. This vibrantly green and incredibly fresh EVOO is lightly filtered to extend the shelf life. The polyphenol level is ~650 mg/kg.
